Peerkangai Poriyal is a traditional South Indian dry stir-fry made with ridge gourd (a ridged, dark green summer squash). The vegetable is peeled, chopped, and sautéed with basic tempering spices (mustard seeds, urad dal, curry leaves) and usually finished with grated coconut. It is light, highly nutritious, and commonly served as a side dish for rice and sambar.
